Dusit Thani College collaborates with Chulalongkorn University and The Food School to create the prototype of healthy food innovation “GIN-D”

22 December 2025

On December 9, 2025, Dusit Thani College, a leading educational institution in hospitality and service business under Dusit Thani Hotels, joined hands with Chulalongkorn University and The Food School to discuss collaboration on the research project: Prototype of Healthy Food Innovation “GIN-D”. The initiative aims to foster well-being spaces and economic sustainability for Thai society. The meeting was attended by Dr. Atthawet Prougestaporn, Rector of Dusit Thani College, together with Professor Dr. Chanathip Pharinno, Council Member of Dusit Thani College, and the college’s executives. They met with the research team from Chulalongkorn University led by Associate Professor Dr. Pannee Cheevinsirivat, Assistant to the President for Research; Professor Dr. Chitlada Areesantichai, Dean of the College of Public Health Sciences and Project Leader; Assistant Professor Sornnate Areesophonpichet, Faculty of Education; Assistant Professor Dr. Thitirat Panbumrungkit, Institute of Asian Studies; Associate Professor Dr. Prin Chiaramaneechotichai, Faculty of Architecture; and Associate Professor Dr. Sakultham Senorpim, Faculty of Science. In addition, Ajinomoto Co., which has previously conducted projects related to healthy food with the goal of building a healthier society through scientific knowledge and amino acids, also joined the discussion.

Dr. Attawet Pruksasthaporn, Rector of Dusit Thani College, stated that Dusit Thani College is a small institution focused on industry, with its origins in producing personnel for the service sector. Its philosophy is that industry and education must go hand in hand. At present, the college is expanding into the sciences to enhance students’ all-round capabilities, alongside its established expertise in service. Dusit Thani College believes that its specialization in food and practical skills can complement Chulalongkorn University’s academic and research strengths.

Meanwhile, Associate Professor Dr. Pannee Cheevinsirivat, Assistant to the President for Research at Chulalongkorn University, explained the core policy of the current President (Prof. Dr. Wilert Puriwat), which emphasizes holistic growth across all dimensions. This policy promotes integrated research across science, social sciences, and humanities. Chulalongkorn University recognizes Dusit Thani College’s internationally acknowledged expertise in food and hospitality, which will be highly beneficial in expanding the project to the global level.

The Prototype of Healthy Food Innovation “GIN-D” research project aims to develop innovation districts and incubate food entrepreneurs, creating healthy food innovations to promote sustainable urban living. It also seeks to assess the well-being of Chulalongkorn University personnel and the public in the Suanluang Square–Banthat Thong area. The collaboration among these institutions will encompass both research and academic services.

Dusit Thani College is proud to announce that its students have once again placed among the top three at the ALLiance Sustainability in Hospitality Contest, organized by The Alliance Network in partnership with Relais & Châteaux — marking the second consecutive year the College has reached the podium in this international competition. In the 2026 edition, Ms. Purimprat Pradit, Ms. Isabella Marissa Stacy, and Mr. Pokin Puntu, first-year students from the International Hospitality Management and Professional Culinary Arts International programs — secured 2nd Runner-Up with Nai Mõng – Real Taste from the Countryside, a premium family dining concept rooted in the culinary traditions of Phatthalung, Southern Thailand. The project reimagines authentic Southern Thai cuisine through sustainably sourced, seasonal ingredients and a modern interpretation of local culinary heritage, inviting guests to experience sustainability not as a compromise but as part of an immersive, memorable dining journey. As 2nd Runner-Up, competing in their very first international competition, the team received a €200 voucher courtesy of Relais & Châteaux, an official certificate of achievement, and the opportunity to present their concept to the Relais & Châteaux CSR team. This year's result builds on a strong showing in 2025, when Dusit Thani College swept both 1st place (SHINRAI, a zero-waste culinary concept blending Japanese technique with Thai ingredients) and 2nd place (Re-leaf, a regenerative eco-wellness farm stay concept) in the contest's inaugural edition, triumphing over competitors from all 22 member countries of The Alliance Network at the time. The ALLiance Sustainability in Hospitality Contest challenges Hospitality and Culinary Arts students from Alliance member institutions — spanning more than 20 countries across Europe, the Americas, Asia, and Africa — to design innovative concepts that turn sustainability into an engaging, rewarding guest experience across its environmental, social, and economic dimensions, judged by a panel of industry professionals and sustainability experts. Two years running, students from Dusit Thani College's international program have proven that Thai culinary talent and sustainable thinking can consistently stand out on a global stage.
