Increase professional skill sets and experience with Dusit Hospitality Academy (DHA) under Dusit Thani College

12 February 2024

Recently, students studying in the Professional Chef and Professional Pastry Chef Talent Opportunity Programs (TOP) of the Dusit Hospitality Academy (DHA), the professional upskilling and reskilling offering from Dusit Thani College, were able to gain valuable industrial and technological insights into the current trends and developments in kitchen technologies. Special guest lecturer Chef Supachai Udomsathapol, National Corporate Chef, Thailand for leading commercial kitchen solution provider from Germany Rational, shared his expert knowledge through a presentation entitled Kitchen Concepts: Intelligence Redefined.

DHA students learned about the latest technological developments in kitchens and the factors driving these advances, such as staff shortages, changing guest expectations and requirements, growing competition, sustainability, and most significantly cost pressures. Functionality in kitchen appliances like combi-steamers and bratt pans now include simple drag and drop programming for cooking sequences, integrated interfaces such as USB and WiFi, allowing for Cloud connectivity providing centralized Recipe Management, Hygiene Management and Asset Management (real-time status monitoring and reporting) and more. These in turn lead to clear business benefits such as increased productivity, efficiency, quality, waste reduction, which also help in reducing costs and environmental impact.

The visit was organized by Ajarn Woottisak Simhong, who is the DHA TOP instructor for the module Kitchen Systems and Procedures. He added “The students asked many questions to further their knowledge, so it was a valuable experience for them, providing them with an opportunity to learn from an industry leader and gain a deeper understanding of current trends in the industry”.

DHA Executive Director, Zeph Norrish added “this is another great example of the DHA TOP instructor team ensuring our students gain maximum benefit in their learning and development, through close connectedness with key players and leaders from across the hospitality industry”.

TOP is a specialized skills development program designed by DHA (Dusit Hospitality Academy) under Dusit Thani College. The program provides a 3-, 6-month learning period which is perfectly fit for general public and workers who aim to step into the hospitality industry or step up to the higher position. The curricula are tailored following the demands and proficiency level in order to align with the learner’s skills, interests, and experience. The student will eventually become a skillful practitioner driving hospitality forward in the future.

Dusit Thani College is proud to announce that its students have once again placed among the top three at the ALLiance Sustainability in Hospitality Contest, organized by The Alliance Network in partnership with Relais & Châteaux — marking the second consecutive year the College has reached the podium in this international competition. In the 2026 edition, Ms. Purimprat Pradit, Ms. Isabella Marissa Stacy, and Mr. Pokin Puntu, first-year students from the International Hospitality Management and Professional Culinary Arts International programs — secured 2nd Runner-Up with Nai Mõng – Real Taste from the Countryside, a premium family dining concept rooted in the culinary traditions of Phatthalung, Southern Thailand. The project reimagines authentic Southern Thai cuisine through sustainably sourced, seasonal ingredients and a modern interpretation of local culinary heritage, inviting guests to experience sustainability not as a compromise but as part of an immersive, memorable dining journey. As 2nd Runner-Up, competing in their very first international competition, the team received a €200 voucher courtesy of Relais & Châteaux, an official certificate of achievement, and the opportunity to present their concept to the Relais & Châteaux CSR team. This year's result builds on a strong showing in 2025, when Dusit Thani College swept both 1st place (SHINRAI, a zero-waste culinary concept blending Japanese technique with Thai ingredients) and 2nd place (Re-leaf, a regenerative eco-wellness farm stay concept) in the contest's inaugural edition, triumphing over competitors from all 22 member countries of The Alliance Network at the time. The ALLiance Sustainability in Hospitality Contest challenges Hospitality and Culinary Arts students from Alliance member institutions — spanning more than 20 countries across Europe, the Americas, Asia, and Africa — to design innovative concepts that turn sustainability into an engaging, rewarding guest experience across its environmental, social, and economic dimensions, judged by a panel of industry professionals and sustainability experts. Two years running, students from Dusit Thani College's international program have proven that Thai culinary talent and sustainable thinking can consistently stand out on a global stage.
