Panuvit Khaokaew or “Chef Folk”, the alumnus of B.B.A. program in Culinary Arts and Kitchen Management, has been another graciously proud success of Dusit Thani College (DTC) as he has recently been chosen to be the Thai representative in “Bocuse d’Or World Finale 2021”, the global culinary competition, held in France.
Renowned among professional chefs around the world, Bocuse d’Or is a perpetual culinary competition that gathers 60 national selections globally. In this year, the representative team from Thailand, led by Chef Folk, has brought success to the country as they ranked 14th with these gracious menus:
“Take Away” theme:
Starter: Tomato mousse sriracha sauce flavored, cover with. Young jasmine rice chaud froid, thai “hom mali” rice milk panna cotta marble, curry mayonnaise.
Main course: Black tiger prawn mousseline, tomatoes & prawn consommé pearl, kohlrabi fondant with dill coriander cream jelly, thai-style black potato, chili croquette, cherry tomato marinated with chartreuse thai cocoa nibs, tom yum flavored prawn bisque.
Dessert: White chocolate yogurt mousse, almond dacquoise, tomato tar tatin, margarita thai chocolate bonbon, vodka, yuzu sphere.
“Theme on a platter”: Braised oyster blade bless charcoal sous-vide, shiitake glaze, Thai herbs flavors, Thai crispy popped rice, carrot, Thai « hom mali » rick milk, pickled carrot center, crispy jasmine rice golden cup with nut, forest mushroom and shallot port wine jelly, pickled white onion, rutabaga fondant and mustard, pea tuile with dijonnaise, Thai beef jus.
Like many other DTC students, Chef Folk started pursuing his dream of being a culinary master at the time he flourished his youth memory in home’s kitchen. He then decided to enroll in Dusit Thani College’s Bachelor of Business Administration Program in Culinary Arts and Kitchen Management. This is the place he was introduced to many culinary competitions and supported to attend his first program, enhancing his experience and his dream.
At the age of 19, Chef Folk has not only participated in a globally renowned youth program “World Champion Junior Talent Disciple Escoffier 2016”, but also achieved the remarkable “World Champion” position. After the gracious success, Chef Folk has continuously harvested more experience from more competitions until he has been honored to be Thailand’s representative for Bocuse d’Or World Finales 2021 in France.
Dr. Ploycharas Pragattakomol, Lecturer and Manager of Culinary & Academic Competitions, said “Bocuse d’Or competition is a huge stage for all chefs who dream to have their national flag on their uniforms. As a team from Thailand, we are passionate to show the world that Thai cuisine can graciously stand on the global stage. Additionally, the word team is not driven only by a single person, so all supporters, including the President, coaches, assistant chefs, support team, and sponsors, are aiming at the same goal of standing in the final round.”
In this year, the representatives of this competition are Panuvit Khaokaew or “Chef Folk”, Jatuporn Juengmeesuk, and Thanathip Piyakampiam, following with 3 assistant chef practitioners from Dusit Thani College which are Puripat Wuttipattananon, Witthawat Puckpibool, and Patcharaphol Yomsuk. “This opportunity to provide hands-on experience to new generations might not be possible without the sponsors, Singha Corporation, Tourism Authority of Thailand, Dusit Thani College, Kad Kokoa, Allied Metals, SarnSard, Welbilt Asia, ScanBox, and many other financial supporters,” said Dr. Ploycharas.
