Culinary Arts and Kitchen Management Program at Dusit Thani College, Thailand’s leading hospitality and culinary institute under Dusit Group, has recently brought a variety of bakeries, pastries, and beverages to public for product sampling up to 21 different types. These delicacies which were served at Srinakarin Hall, Dusit Thani College, were masterpieces of third-year students from Pastry and Bakery Cluster under Culinary Arts and Kitchen Management Program, Dusit Thani College. This project was run as a part of the course Principles of Bakery Business under the name Master Project.
Master Project was initiated to let the students integrate all they had learned from Pastry and Bakery Cluster by creating various types of confectionery before presenting and giving them to public as product sampling. This project was also to simulate the real business atmosphere that allowed students to practice designing product types in line with their targeted markets, calculating budgets and profits as well as selling prices, ideating persuasive concepts, and, the most importantly, using creativity in making eye-catching palatable products. If the students make business in the future, this will guarantee their success.
The students offered a wide range of bakeries and pastries up to 21 menus including Apple Tart with Sweet Fish Sauce Mousse, Back to the Summer, Bailey’s Choc Mousse, Banana Bonheur, Banoffee Choux, Begin Again, Blueberry Cream Cheese, Brisant, Chocolate Mousse Yuzu Jam, Chocshock!, Honey Mon, Lychee Rose & Mixed Fruit Tart, Macarita, Mango Sticky Pie, Panna Cotta Candle, Rose De La Saint Valentin, Rum Aum Pai, Strawberry Chocolate Tart, Strawberry Mountain, and Fish in the Jungle.
This event did not only fulfill visitors’ appetite, but also reflected the incubation of bakery and pastry making skills until the students of Pastry and Bakery Cluster under Dusit Thani College’s Culinary Arts and Kitchen Management Program truly achieved mastery.
